10 Minute Recipe: Mixed Vegetables and Rice

Here’s a fast, easy way to prepare 2-4 servings of mixed vegetables and rice:

1. Into a 1 or 2 quart pot put ½ cup of water and put on a burner turned to high.

2. Add 1 or 2 tablespoons of butter or ghee “impurities”.

3. Add ½ teaspoon of salt.

4. Add ½ cup of instant rice¹.

5. Bring to a boil, turn off heat, cover, and let stand for at least 5 minutes.

6. Into a 1 quart microwavable bowl, dump a can of mixed vegetables² (usually beans, carrots and corn) or peas and carrots (Do not drain).

7. Add ¼ cup of water.

8. Add one package of “Instant Oatmeal Regular”¹ (I use “Our Family” brand, which comes in boxes of 12 “packets”) or one package of “Instant Cream of Wheat Original”¹ (This also comes in boxes of 12 “packs”)

9. Add ½ teaspoon of salt.

10. Mix thoroughly.

11. Add (mix later) ½ of a block of cream cheese (4 ounces).

12. Add (mix later) 1 heaping tablespoon of Patak’s Hot Mixed Relish³. (Available at health food stores and East Indian grocery stores.)

13. Microwave on high for 4 minutes.

14. Add ½ cup of cashews. (optional)

15. The cooked rice from step 5 may now be added, or the rice may be fluffed with a fork and served separately.

16. Stir until all of the ingredients are thoroughly mixed.

¹ The oatmeal/cream of wheat and rice soaks up most of the excess water, and also, when eaten together with the peas/beans, results in providing a complete protein, which grains or peas/beans alone do not provide. In addition to the oats/cream of wheat and rice, corn is also classified as a grain.

² I use “Green Giant Garden Medley” because it doesn’t have any obnoxious ingredients such as onions and/or garlic.

³ The relish not only makes the preparation more tasty, but the hot spices are an aid to digestion. The relish also improves the appearance of the preparation, which is an additional aid to digestion.
