This recipe is a very fast way to prepare a delicious, nutritious, Ekādaśī (no grains or beans) meal. It uses a paper bowl¹ and a plastic spoon¹ as the only eating utensils. It also uses the paper bowl as the microwave container. It does not require any perishable ingredients such as fresh vegetables or dairy products (butter will keep for months in the freezer), so you only need to stock up on groceries once every few months!
1. Start 2 tablespoons (¼ stick) of butter melting in the microwave².
2. Fill a 20 oz. microwavable, disposable paper bowl¹ ½ full with some combination of frozen “shredded hash brown potatoes” (Make sure that it’s not cooked in corn oil), frozen cauliflower, frozen chopped broccoli, etc.
3. Add a few golden raisins.
4. Add some chopped dates.
5. Add deluxe mixed nuts (no peanuts) to make the bowl full to the brim. (The frozen vegetables will shrink as they are heated.)
6. Add ½ teaspoon of salt.
7. Add ½ teaspoon of powdered ginger. (optional)
8. Add ½ teaspoon of ground turmeric. (optional)
9. Add ½ teaspoon of hot chili powder. (optional)
10. Add ½ teaspoon of fennel seed. (optional)
11. Add ½ teaspoon of ground mustard. (optional)
12. Add ½ teaspoon of ground coriander. (optional)
13. Add ½ teaspoon of crushed red pepper. (optional)
14. Rinse off the measuring utensil and hang it up to dry. (No time to wash dishes, remember?)
15. Microwave on high for 3 minutes.
16. Mix in ¼ block (2 oz.) of cream cheese which has been pre-softened by microwaving for 15 seconds. (optional)
17. Add the melted butter.
18. Mix thoroughly using a disposable plastic spoon¹ (to be used later for eating).
19. Offer and serve while still warm.
SUGGESTION: Serve with sour cream (in a separate
container) for use as a dressing.
¹ At Wal-Mart®, I’ve purchased Dixie®
brand 20 oz. microwavable paper bowls in packages of 30 for US$2.97
and Diamond® brand plastic spoons in packages of 48
for US$.96.
² If you have two microwave ovens, like I do, then the butter could be melted during step #16, while the main preparation is being microwaved. I microwave the butter in a wide mouth (5 ½") “coffee cup.” The purpose of using a wide mouthed cup is that it eliminates the possibility of the butter “boiling over.” I keep the cup in the freezer along with the butter just for this purpose. I also keep a sharp paring knife in the freezer for cutting the frozen butter. I microwave it for 80 seconds in an older, less efficient microwave oven, which doesn’t scorch the butter, even on high. Also, there’s no need to wash the cup and knife every time you use them. Simply put them back in the freezer.
