Note: This recipe is very similar to “Hot Cereal for Those with No Time” (http://llbest.com/HotCerealFTWNT.htm), except that butter has been substituted for the peanut butter, and instant mashed potato flakes have been substituted for the instant oatmeal.

If so, then this recipe may be for you!
Don’t let the simplicity of this Ekādaśī recipe fool you. It is incredibly delicious. It requires only 6 ingredients. It uses a disposable paper bowl¹ and a disposable plastic spoon¹ as the only cooking / eating utensils. None of the ingredients are perishable (Butter will keep for months in the freezer), so grocery shopping is minimized.
1. Add 2 tablespoons (¼ stick) of butter to a 20 oz. disposable paper bowl¹.
2. Microwave for 30 seconds. If the butter is frozen, microwave for 1 minute.
3. Add 4 heaping spoonfuls of your favorite jam or jelly using a disposable plastic spoon¹. (optional)
4. Add ½ of a 12 oz. can of evaporated milk². (Before opening the can, shake it well. Also, for the sake of accurate measurement, remove the top completely.)
5. Add ¼ cup of water.
6. Add ½ cup of instant mashed potato flakes.
7. Add a liberal amount of shredded coconut.
8. Add a liberal amount of golden raisins.
9. Mix, using the plastic spoon.
10. Microwave on high for 1 minute.
11. Mix.
12. Microwave on high for 30 seconds or until the mixture begins to boil.
13. Mix.
14. Repeat step #12 and #13 until the mixture begins to boil.
15. If no jam or jelly was added in step #3, add some honey.
16. Mix.
17. Serve while still warm.
¹ At Wal-Mart®, I’ve purchased Dixie®
brand 20 oz. microwavable paper bowls in packages of 30 for US$2.97
and Diamond® brand plastic spoons in packages of 48
for US$.96.
² If you don’t have any evaporated milk, then 1 cup of water plus ½ cup of powdered milk could be substituted for the evaporated milk and the ¼ cup of water.
