If so, then this recipe may be for you!
Don’t let the simplicity of this Ekādaśī recipe fool you. It is incredibly delicious. It requires only 5 non-optional ingredients. It uses a disposable paper bowl* and a disposable plastic spoon* as the only cooking / eating utensils. None of the ingredients are perishable (Butter will keep for months in the freezer), so grocery shopping is minimized.
1. Using a 20 oz. microwavable, disposable paper bowl*, melt 2 tablespoons (¼ stick) of butter in the microwave.
2. Using a disposable plastic spoon* add 4 heaping spoonfuls of your favorite jam or jelly to the melted butter. (optional)
3. Add ½ of a 12 oz. can of evaporated milk. (Before opening the can, shake it well. Also, for the sake of accurate measurement, remove the top completely.)
4. Cover the remainder of the can of evaporated milk, and refrigerate until next time.
5. Add 1 cup of powdered milk a little at a time. mixing it using the plastic spoon.
6. Add ½ cup of shredded coconut.
7. Add ½ cup of golden raisins.
8. Mix.
9. Microwave on high for 2 minutes, pausing the microwave and stirring the mixture whenever the mixture is about to boil over. (It’s okay to leave the plastic spoon in the bowl while microwaving.)
10. Mix.
11. Serve while still warm.
* At Wal-Mart®, I’ve purchased Dixie® brand 20-oz. microwavable paper bowls in packages of 30 for US$3.38 and Diamond® brand plastic spoons in packages of 48 for US$1.14.
