Basmati rice, also known as “popcorn rice,” is the world’s most
flavorful and nutritious. “Normal” white rice is bleached brown
rice. The bleaching process takes away many of the nutrients.
Basmati rice, on the other hand, is naturally white, and therefore
needs no bleaching.
(Makes 2 to 4 servings)
1. Put ½ cup of basmati rice into a 1 quart
microwavable bowl (one that has a microwavable cover).
2. Wash rice two or three times.
3. Using a can opener, punch two 1 inch long holes in the edge of a can of peas, 180° apart.
4. Drain all of the liquid out of the pea can into a 1 cup measure.
5. Add water to make 1 cup of liquid.
6. Add the liquid.
7. Add 1 teaspoon of salt.
8. Add some of your favorite spices. (optional)
9. Add ¼ cup (½ stick) of butter.
10. Microwave for 3 minutes (The idea is to microwave it until it almost starts to boil. Experiment until you get the right time for your particular microwave oven)
11. Set microwave for 2 minutes and press start. Watch closely until the liquid starts to boil vigorously.
12. Stop the microwave by opening the door and put a lid on the bowl.
13. Press “Clear” and set the time to 12 minutes.
14. Press “Start.”
15. Set the power level to 2 (out of 10) or to “defrost.” (This is extremely important, otherwise all of the water will boil away and the rice will burn)
16. After the 12 minutes are up, add a handful of frozen French fries. (optional) While adding them, break them into pieces so that no single piece is longer than about 2 inches.
17. If frozen French fries were added, mix gently so as not to break up the rice.
18. Add the can of peas.
19. Add a handful of cashews. (optional)
20. Mix gently.
21. If frozen French fries were added, microwave on high for another 30 seconds.
22. Offer and serve while still warm.
